Bella Cucina "Cordelle" Pasta

Bucatini, also known as perciatelli, is a thick spaghetti-like pasta with a hole running through the center. They are common throughout Lazio, particularly Rome. A similar ziti is a long hollow rod that is also smooth in texture and has square-cut edges; "cut ziti" is a ziti cut into shorter tubes.
